Tagliatelle and Potatoes with garlic and Oil:
serves 6
2 large baking potatoes
375g tagliatelle
salt
250ml olive oil
10 garlic cloves, crushed
1 red cili, seeded and chopped
freshly ground black pepper
4 tablespoons chopped fresh parsley
Preheat oven to 200oC. Bake potatoes for 40 - 50 miinutes
or until tender. When cool, cut into 5mm slices.
Cook tagliatelle in boiling salted water until al
dente; drain.
Heat oil in a large saucepan, add garlic, chilli and
potatoes and cook over moderate heat for 5 minutes until golden.
Add tagliatelle to pan and mix. Season. Serve hot,
sprinkled with chopped parsley.
